Grrr.

So I had to make a dessert for tomorrow's staff cookout. It's our wing's month to make desserts. I went to make my tofu chocolate banana pudding, and realized that only the first batch would work. I used silken in the first batch, but they only had one tub of that, so I needed to use regular tofu in the second batch.

Well...didn't that taste like crap? Holy shmokes. So I tried dressing up the first batch in a small bowl, and it tastes great, but it looks bad because I was working in frustration. Also...it's just not big enough to share.

*sigh* I so wanted to assert my Renaissance man skills, but I'm hitting the grocery store on the way into work tomorrow to pick up a pie instead.

It's mope time. On the upside, I've got pudding in the fridge.

i'm not sure about what foods vegans eat and don't eat so i'm probably no help here.. i do have a very simple recipe for cookies though.. (a huge crowd pleaser) just incase you feel up to it. if you get up early, go to publix or whatever store is closest. grab a few logs of sugar cookie dough in the dairy aisle and a jar or rasberry jam. you can also get some raw sugar. you'll find it where all the sugar products are. this step is optional but makes for a better cookie.

open dough.. slice off like your going to make reg. cookies. roll dough into balls and place on baking sheet. press your thumb into the balls and place small dollups of jam into holes.. (do not press all the way thru dough, just enough to make a small well for the jam) lightly sprinkle sugar around edges of cookie but not on the jam part. then bake according to directions on package. cookies need time to cool off.. if you bake them on sheets of parchment paper (non stick paper), you can slide the paper off the baking sheet and start your next batch. parchment can be found where tin foil and stuff is.. make sure you don't buy wax paper..

or you can just wuss out and BUY a pie..

simi has an amazing recipe for vegan mousse. its like made from avocado of all things. kudos on trying to make vegan though!

I feel for you! Firm tofu just doesn't replace silken very well does it?! Same when it's vice-versa.... hey at least you have some extra stuff in the fridge for yourself now! Nothing wrong with that!
Awesome Sara- nawwwww thanks luv! Although, it does contain honey, which some vegans don't eat...
which brings me to a question....where do stand on the honey thang MPJ?

sexy...I got two cherry cheese danish rings. they were yum. time was not a luxury this morning.

Sara & simi...I use avocado in my mousse/pudding, too. I'm just vegetarian, not vegan, so honey's okay, but mine has sugar.

i am a cheese whore but can't stand that cheesecake type stuff. i am all about texture when it comes to food and that stuff just has a funky texture.. =) i'm glad it was yum for you though..

after class tomorrow, i am actually going to be making those yummy thumbprint cookies. i was going to get myself a cake to celebrate but cookies are so much more fun to make..
